RITZ CRACKER PIE W/Chocolate Whipped Cream Topping

This Ritz Cracker Pie recipe was a family favorite especially around the holidays. The chocolate whipped cream topping is a perfect compliment to the Ritz cracker pie mixture which is light yet rich. Be sure to separate the egg whites carefully and beat them until they are stiff.

Great family recipe for kids who love to help in the kitchen. They can easily prepare the chocolate topping. Who can resist licking the spoon, kids of any age!! Be sure to refrigerate any leftover pie, although we doubt you will have any leftovers! We recommend that you perhaps prepare two pies if you are planning a large holiday family gathering.

If a family member or guest is allergic to nuts you may omit this ingredient from the recipe.


Pie Mixture:

3 egg whites
1 tsp. baking powder
1 c. sugar
1 tsp. vanilla
1/2 c. chopped walnuts
20 Ritz crackers

Roll Ritz crackers well with a baker's roller. Beat egg whites until stiff. Gradually add 1 cup sugar, baking powder, vanilla, and nuts. Gently fold Ritz crackers into mixture. Pour into greased pie plate. Bake at 325 degrees for 25 - 30 minutes. Cool.

Chocolate Whipped Cream Topping

Topping:
1/2 Pt. Heavy Cream
1/3 c. Baker's Cocoa
1/2 c. sugar

Stir ingredients together, put mixture in your refrigerator for one hour. Whip and spread on top of your pie. Enjoy!
